Sourdough Baking Schedule

I had the pleasure of taking a sourdough bread class at Modern Stone Age Kitchen (MSAK) in Chestertown, MD. Since then, I have been enjoying making sourdough bread, pancakes, and more! But it can be tricky to fit sourdough into my dynamic daily schedule. So, as I often do, I turned to my love of spreadsheets and created an adjustable schedule to calculate the timing of each step based on when I start and the length of the autolyze and rest periods. I hope you find them useful!

Sample Schedules

This table is based on the MSAK Sourdough bread recipe. It gives sample schedules of the sourdough process. Select the time that the initial mix is complete to see the basic schedule when following a 30 minute autolyze and rest time. I only went up to 1p because that would be a baking completion about 8p. Scroll down for an editable spreadsheet to customize it to your exact start and rest times.
